Eat Me.

I've been reading Kenny Shopsin's book "Eat Me: The Food and Philosophy of Kenny Shopsin." You may know him from such excellent Netflix Streaming documentaries as I Like Killing Flies. Regardless of where the inspiration appears, reading Kenny Shopsin will give you permission to do as you will with Eggs. For instance, you could stuff them with Morningstar brand faux bacon and caramelized onions in a bastardization of Scallion Pancakes.


Which is exactly what I did.

Dina helped. She crumbled bacon, helped to dump in the flour, and stirred, stirred and stirred.

Why, yes. That is a TARDIS mug. Why do you ask?
She was very annoyed when all the batter had to be cooked. But, this is what I've discovered: this batter can be turned into many, many delicious things. I would pour it over sauteed/roasted veg; sauteed mushrooms and cheddar; any quiche filling; cilantro, sprouts and shrimp; blue berries or mixed frozen berries with their juice mixed in for the flavorful liquid; or just chocolate chips and call it a day. It's almost Yorkshire Pudding without the puff. It is a mutt-like of a Shopsin inspired recipe and I am going to have fun with it, darn it!

So. Here tis. Have fun. Locally, the best prices for Morningstar Frozen Fake Meats of all varieties are at Target. Price Chopper is trying to meet them, but while 2/$7 is close enough to pick up a couple if you don't have time to make a separate trip, Target's $3.15 on sale is still cheaper if you're stocking up. OR, heck, you can just use real meat projects and all the grease involved, and call it a day.

Leah's Eggy Pancakes
Liberally adapted from, but still with a final nod to Helen Chen's One Minute Scallion Pancakes


2 eggs
1/2 cup flavorful liquid of choice (I use generally use milk - skim works fine)
2/3 cup all purpose flour (whole wheat will do fine, if you wish to substitute in - I normally do half and half)
Salt
Mix in(s) of choice
4 tsp oil

1. Heat skillet on medium heat.

2. Combine all ingredients, excepting the oil.

3. Pour 2 tsp oil in skillet. Pour in one half on the batter. Let set 2 minutes, until cooked along the edges and some bubbles in the middle. Turn and cook another minute. Remove. Eat. Repeat. Share and Enjoy!
